Papaya boat and a lovely read




This morning I’m enjoying a delicious and nutritious papaya boat {papaya stuffed with frozen strawberries and calypso mango} while reading Miranda Kerr’s delightful new book Empower Yourself. 

• Papaya is rich in antioxidants, vitamin C, flavonoids, some B vitamins, potassium, magnesium and fibre. Papaya contains the digestive enzyme papain, which is used similarly to bromelain, the digestive enzyme in pineapple. This means papaya is wonderful for settling sensitive stomachs like mine. If you are yet to try papaya, I strongly recommended giving it a go - just make sure it’s ripe! // “Let food be thy medicine, and medicine be thy food"
