Simple tofu & veggie stock


I love how simple and creative you can get with soups, and their great for a light digestive meal easy on the bowl, full of nutrition and you can basically shove whatever into it. 

On the stove boil 200ml of water
Chuck in
- 1 cup of sliced bokchoy 
- 1/2 finely cut carrot
- handful of chopped onion 
- 1/2 cup of sweet potato 
- handful of coriander 
- 1 cup of diced tofu
- 2tblsp hemp seeds 

Let all the flavour soak into the boiling water for up to 20-30 minutes. Serve hot and enjoy 

Vegetarian avocado dip



You will need: 
2 ripe avocados, peeled, stone discarded, diced 
Juice of half a lime (about 2 teaspoons)Finely grated rind of half a lime (1-2 teaspoons) 1 tomato, de-seeded, finely chopped 2 shallots, finely choppedSweet chilli sauce, 2 teaspoons (optional)Fresh coriander leaves, 1 tablespoon,  finely chopped 


Directions


  • Place all ingredients in a bowl and combine. 
  • Serve either as a dip, on bruschetta,  or as a side for barbequed and evening snacks!

The avocado should be relished into every diet. Yes, they are high in fat, but the kind of fat that has impeccable health promoting properties. That is monounsaturated fat, the kind of fat that lowers cholesterol. So try not to get confused between the fat the grows in the ground, to the fat that is trans and made in a factory.

    Acai bowls

    Fresh fruity acai bowls 

    Blend • 
    1/2 cup of coconut water 
    1/2 cup of frozen berries
    1 tsp of acai powder 
    1 tblsp goji berries 

    Serve in a bowl topped with • 
    Homemade gronola 
    Walnuts
    Peptai seeds
    Chia seeds
    Hemp seeds 
    Almond flakes 
    Buckwheat 
    Coconut flakes

    Progress photographs (Amy)




    As most of you probably know, I have an illness called Anorexia Nervosa. These four photos are of me (excuse the poor quality), but just over three months apart. In late August this year, my health plummeted dramatically and I was the most unwell that I’d been since being hospitalized. I am not going to post a photo of what I looked like in late August, because it is far too upsetting and distressing to even look at photographs of myself then. So just imagine the left photos minus 12kg or so. The photos on the left were a few months before my weight loss. After being told that I was going to die and that I was on my deathbed yet again, I did not die. On the 4th of September 2013 I made the choice to begin training with a personal trainer, and it has been an absolute struggle physically and mostly mentally, but it’s been the best decision that I’ve ever made. I’ve been building muscle and training as hard as I possibly can and it is so rewarding finding myself getting physically stronger each and every day. Every meal time I still struggle, every single day my mind is plagued with dark thoughts. I still have Anorexia but one thing is for sure, I’ve chosen to fight like hell because I do not want to be dead anymore. I want my life back. Training makes me feel alive and I have finally realized that having Anorexia is not being alive, it is not living at all. I am no where near where I want to be, but I am a work in progress. This is a battle that I am going to be fighting for my entire life, but I finally want to fight. I cannot thank my beautiful family and amazing trainer enough, if it wasn’t for them I would not be alive to type this.

    Note - since the last photographs were taken, I have progressed much further in regards to my muscle development, but have not taken photos as of yet. I will make another progress photo post a little later down the track.

    Basic Green Juice

    Today I am going to post my favourite green juice recipe. I am a huge fan of green juices due to their extremely high vitamin, antioxidant and mineral content. For fast energy and a quick dose of nutrients, I recommend juicing at least a few times per week. 




    Green Energy Juice 

    You will need: 
    • 1 bunch of kale
    • 500g of baby spinach
    • 3 large cucumber 
    • 1 thumb sized piece of fresh ginger
    • 2 whole lemons
    • 2/3 apple to taste (optional - I prefer not to use apple, but if you would rather a sweeter juice, use apples or oranges)
    The amount of fruit and vegetables used will depend on how much juice you are wanting to make, usually I make just a single cup full of fresh juice and to do that I use the ingredients and quantities listed above.

    Place all the beautiful ingredients in your juicer or blender. If you're wanting to retain the fibre, use a blender but if you want your juice to be absorbed into your body quickly, use a juicer (regular or cold pressed).

    Enjoy filling your body with delicious and nutritious green juice!

    Baked Vegan Chickpea Falafel balls


    makes 15 – 20 falafels
    Ingredients:
    • 4 1/2 cups cooked or canned chickpeas
    • 1 onion, roughly chopped
    • 1/4 cup chopped fresh parsley
    • 4 cloves garlic
    • 3 – 4 tbsp buckwheat flour
    Seasoning:
    • 2 tsp cumin
    • 1 tsp sea salt
    • 1 tsp ground coriander
    • 1/4 tsp black pepper
    • 1/4 tsp cayenne pepper
    • Pinch of ground cardamom

    Directions:
    1. Start by preheating the oven to 200 degrees Celsius/400 degrees Fahrenheit. If using canned beans remember to drain and rinse them well. Place them into your food processor along with all the other ingredients. You can make this using a hand blender instead, though be careful not to over-blend the mixture. It should be somewhat grainy and not as smooth as hummus. 

    Perfect served with hummos dip, in a salad or a gluten free wrap!
