Simple tofu & veggie stock


I love how simple and creative you can get with soups, and their great for a light digestive meal easy on the bowl, full of nutrition and you can basically shove whatever into it. 

On the stove boil 200ml of water
Chuck in
- 1 cup of sliced bokchoy 
- 1/2 finely cut carrot
- handful of chopped onion 
- 1/2 cup of sweet potato 
- handful of coriander 
- 1 cup of diced tofu
- 2tblsp hemp seeds 

Let all the flavour soak into the boiling water for up to 20-30 minutes. Serve hot and enjoy
